New Flavor Targets Specialty Cheese Differentiation LaClare Creamery has launched Ube Goat Cheese, a purple-hued chèvre made from its award-winning Original Goat Cheese blended with ube, a Filipino purple yam known for its subtly sweet and nutty flavor profile.

Ube (pronounced oo-bay) is traditionally used in Filipino desserts and savory dishes for its distinctive taste, slightly reminiscent of vanilla. The ingredient's vibrant purple color marks a visual departure from typical specialty cheese cases, which LaClare aims to leverage for shelf differentiation.

Marketing the "Unicorn" Angle "Our new Ube Goat Cheese breaks up the visual sameness that shoppers typically encounter in the cheese case—its color signaling something fun and new to discover," said Patrick Considine, national sales director at LaClare Creamery. "Given its whimsical appearance, our team has dubbed the Ube Goat Cheese a 'unicorn' in the cheese aisle. As such, the unicorn-horned goat on our Ube packaging is a promise that what's wrapped inside is rare, playful, and unmistakably special. Because why eat average when you could experience a little magic?"

The cheese can be used in salads, cream pies, spread on bagels, or crumbled over smoothie bowls, according to the company.

Company Background LaClare Creamery, based in Malone, Wisconsin, was founded in 1978 and produces 100% domestically-made goat cheese. The company operates with direct and local milk supply chains and has received multiple national and international awards for its specialty cheese products.

Why It Matters

With colored and flavored chèvre gaining traction in premium cheese cases, LaClare's entry signals ongoing consumer appetite for differentiated goat cheese products beyond traditional plain varieties. The visual distinction may help operators justify premium shelf positioning while appealing to younger, more adventurous cheese buyers seeking Instagram-worthy products.
