Izzio Artisan Bakery has elevated Sara Kafadar to president and chief commercial officer, formalizing a co-leadership structure alongside founder and CEO Etai Baron as the Colorado-based sourdough brand posts its second consecutive year of retail sales growth exceeding 40%. The move signals a deliberate organizational bet on shared executive accountability at a moment when the brand is scaling aggressively across retail channels and preparing to extend its sourdough platform into new food categories.

Kafadar, who joined izzio as CCO in 2015, brings prior senior experience across IAWS Foods and ARYZTA businesses including La Brea Bakery, Cuisine de France, and Delice de France. In her expanded role she retains ownership of sales, marketing, R&D, and brand development, while adding strategic revenue generation, customer value creation, and operational efficiency to her remit. Baron will continue to steer overall company direction, institutional strategy, and long-term value creation.

"Sara has been an integral partner in building izzio into the business it is today, helping consumers rethink what they expect from their food," said Baron. Kafadar framed the opportunity in category terms: "I am excited to build on that foundation as we bring real sourdough innovation into new categories and to more tables."

Retail Footprint & Capacity

The leadership restructuring arrives on the back of meaningful commercial momentum. Izzio now distributes across more than 15,000 retail locations and opened a second production facility in Thornton, Colo. earlier this year to relieve capacity constraints and support continued door-count expansion. The brand has also been named to Bain & Company's Insurgent Brands list in both 2025 and 2026 — a syndicated ranking that identifies independent FMCG brands outperforming their category peers on velocity and household penetration metrics. For retail buyers evaluating planogram space in the in-store bakery and packaged bread aisle, that back-to-back recognition functions as third-party validation of above-average turn rates relative to conventional bread SKUs.

Distribution growth is tracking across both grocery retail and foodservice, with the brand also eyeing expanded assortment in the U.S. and Canada. Earlier this year izzio launched Organic Artisan Sourdough Sandwich Breads to capture demand in the sliced bread set — a move that shifts the brand from the premium in-store bakery perimeter into the higher-TDP (total distribution points) center-store bread aisle, where velocity benchmarks and retailer margin expectations differ materially.

Innovation Pipeline

Three SKUs are rolling out this month: a limited-edition Cranberry Orange Sourdough Batard targeting the holiday seasonal set, a Super Sour Sourdough for fermentation-forward consumers, and a French Sourdough sliced loaf positioned against traditional artisan baking occasions. The seasonal batard in particular is well-suited for end-cap and in-store display programs timed to Q4 holiday selling windows.

Izzio also recently launched a direct-to-consumer subscription program delivering real sourdough breads across the contiguous U.S. — a DTC channel that supplements retail scan data with first-party consumer insights and supports household penetration in markets where retail ACV remains underdeveloped. Looking further ahead, the company has signaled plans to bring sourdough into new food categories beyond bread for the first time, an expansion that could open adjacencies in crackers, snacks, or frozen — categories where the bakery and bread segment has seen accelerating premium-tier growth. Operators and retail category managers tracking the natural and specialty channel will want to watch izzio's assortment announcements closely as those category extension details emerge.
