Caputo & Guest is making a push into the plant-based entrée set with four sous vide mushroom SKUs debuting at the Global Produce & Floral Show (Booth #4088), targeting grocery retailers looking to elevate the fresh produce perimeter with premium, meal-ready options.

The lineup features chef-inspired preparations built around two high-interest functional mushroom varieties — organic Lion's Mane and King Oyster — that have driven outsized velocity in natural and specialty channels over the past two years. The sous vide format is a notable merchandising differentiator: product arrives fully cooked and chilled, requiring only a quick sear or heat-through before serving, which the brand positions as a bridge between fresh produce and the prepared foods aisle.

The Category Opportunity

The plant-based meat and entrée category has faced well-documented velocity headwinds at conventional grocery, with Circana scan data showing category-wide unit declines as novelty faded from earlier, highly processed SKUs. Functional mushroom products, however, represent a counter-narrative: whole-ingredient, minimally processed formats have posted stronger repeat rates in natural/specialty, and retailers including Whole Foods Market and Fresh Thyme have expanded planogram space for mushroom-forward proteins accordingly.

Lion's Mane and King Oyster mushrooms carry an additional tailwind from growing consumer awareness of the cognitive and immune-support attributes associated with functional fungi — a crossover from the supplement aisle that is beginning to influence center-store and perimeter purchasing behavior. For category managers evaluating the fresh prepared or produce-adjacent set, the Caputo & Guest line sits at a compelling adjacency intersection between specialty produce, refrigerated entrées, and better-for-you meal solutions.

Retail Positioning

The sous vide preparation format has precedent in the meat case — brands such as Rastelli's and Smithfield have used it successfully to command premium price points and reduce consumer cooking anxiety — but its application to plant-based mushroom entrées is less crowded, giving early retail partners a potential first-mover advantage on the shelf. The format also supports DSD or direct-ship fresh supply chains common in the specialty produce world, which could smooth slotting conversations with produce-department buyers rather than routing through the more competitive refrigerated entrée planogram.

Retail distribution details, ACV targets, and pricing tiers had not been disclosed at press time. Buyers and category managers can evaluate the full four-SKU lineup at the Global Produce & Floral Show, Booth #4088.
